The Samson Inn is owned and run by three local farmers, two based in Gilsland and the other in Carlisle. We care deeply about good quality food, seasonality and using local produce wherever possible, often from our own farms. Driven by these ideals we and the chefs have created some delicious dishes that take the best seasonal ingredients and traditional recipes and give them an modern twist. The result is a mouth-watering menu that is both familiar and original.
